Sodium hydroxide is a highly caustic base and alkali that decomposes proteins at ordinary ambient temperatures and may cause severe chemical burns. It is highly soluble in water, and readily absorbs moisture and carbon dioxide from the air. It forms a series of hydrates NaOH·nH 2O.[13] The monohydrate NaOH·H 2O crystallizes from water solutions between 12.3 and 61.8 °C. The base and acid are prevented from reacting prematurely by the inclusion of a buffer such as cornstarch. Baking powder is used to increase the volume and lighten the texture of baked goods. It works by releasing carbon dioxide gas into a batter or dough through an acid-base reaction, causing bubbles in the wet mixture to expand and thus leavening the mixture. The first single-acting baking powder was developed by Birmingham based food manufacturer Alfred Bird in England in 1843. The first double-acting baking powder was developed by Eben Norton Horsford in America in the 1860s.

Uses. Sodium phosphates have many applications in food and for water treatment. For example, sodium phosphates are often used as emulsifiers (such as in processed cheese), thickening agents, and leavening agents for baked goods. They are also used to control pH of processed foods.
